Quiche

This is my own recipe for quiche, enjoy! Quiche is better the more liquid you can remove from the filling. Use the Flaky Butter Pie Crust Recipe I posted before this as your crust.

Filling:

  • 4 eggs
  • 1.5 cups half & half or 0.75 cups milk and 0.75 cups cream
  • salt to taste
  • freshly ground black pepper to taste
  • red (cayenne) pepper to taste
  • corn (kernels, whole or creamed)
  • onion (diced)
  • cheese (torn or shredded)

Optional Additions: (really anything you like, but make sure to remove as much liquid as possible for the best quiche!)

  • Broccoli
  • Mushrooms
  • Zucchini
  • Bacon
  • Spinach
  • In a large mixing bowl combine eggs, half & half (or milk and cream), salt and black and red peppers. Stir thoroughly. Saute the onion in light butter until it is translucent. Place on a paper towel or strainer to remove as much liquid as possible. Quiche will have a hard time setting-up if it has too much liquid from the filling, so anything that is likely to add water should be cooked first. I steam: broccoli, saute: onion, mushrooms, zucchini, cook till crisp and crumble: bacon

    Across the Universe – What a GREAT movie!

    Across the Universe is an amazing movie. The cinematography, acting, singing, writing, and anything else that makes a wonderful movie come together in this excellent film. After watching this twice, it is now in the ranks of my absolute favorites, a lofty position indeed! Across the Universe

    Black Bean Pizza – amazing vegetarian recipe! Tasty!

    INGREDIENTS

    * 1 (10 ounce) can refrigerated pizza crust
    * 1 medium onion, chopped
    * 1 garlic clove, minced
    * 1 tablespoon vegetable oil
    * 1/2 cup finely chopped zucchini
    * 1 (15 ounce) can black beans, rinsed and drained
    * 1 (14.5 ounce) can Italian diced tomatoes, undrained
    * 1 1/2 cups shredded Mexican blend cheese, divided

    DIRECTIONS

    1. Press dough into a greased 15-in. x 10-in. x 1-in. baking pan. Bake at 425 degrees F for 4-6 minutes or until crust just begins to brown.
    2. Meanwhile, in a skillet, saute the onion and garlic in oil until tender. Add zucchini; cook and stir for 1 minute. Add the beans and tomatoes; bring to a boil. Boil, uncovered, for 2 minutes; drain. Sprinkle 2/3 cup of cheese over crust. Top with bean mixture and remaining cheese. Bake 8-10 minutes longer or until crust is browned and cheese is melted.

    FOOTNOTE
    A combination of Monterey Jack and cheddar cheeses may be substituted for the Mexican-blend cheeses.

    Great Week of Parties

    I had a “Make Pizza from scratch party last Sunday that was really fun, and then yesterday (Saturday) I put on a St. Patrick’s Day dance party at my house too!

    Lotsa partying and fun, great music and dancing!
